Cindy Crosbie, a native New Orleanian, realized she had a passion for cooking after working at Copper Mountain Colorado during a ski season. She moved back home to begin an apprenticeship through the National Restaurant Association, working her way through many French Quarter restaurants. Cindy moved back to Colorado to work at the Park Hyatt Beaver Creek. She then became the Executive Sous Chef at the Five Diamond Five Star Little Nell Hotel in Aspen. After many years in the kitchens of high end hotels, she became the Head Chef at Salute Wine Bar in Santa Monica, California. Ready to return home to New Orleans, Cindy accepted Susan Spicer’s offer to open MONDO as Chef de Cuisine.

Mondo is the restaurant I've been wanting to open for years — a comfortable, neighborhood place with friendly, professional service, a variety of great food and unique but moderately priced wines, beers and spirits. We'll always bring you the best of our local harvest and reach across the globe for authentic ingredients in our quest to make simple, delicious food that's accessible no matter what neighborhood you're from.
